Keto Vegan Curry Cauliflower Rice Ingredients:

– 1 head of cauliflower

– 1 tablespoon coconut oil

– 1 medium onion, chopped

– 2 cloves garlic, minced

– 1 tablespoon ginger, minced

– 1 tablespoon curry powder

– 1/2 teaspoon turmeric

– 1/4 teaspoon cumin

– 1/4 teaspoon paprika

– 1/4 teaspoon salt

– 1 can (14 oz) coconut milk

– 1 cup vegetable broth

– 1 cup spinach leaves

– Juice of 1/2 lime

– Chopped fresh cilantro, for garnish (optional)

Instructions:

1. Cut the cauliflower into florets and pulse in a food processor until it’s the size of rice. Set aside.

2. In a large skillet over medium heat, melt the coconut oil. Add the onion, garlic, and ginger and sauté for 3-4 minutes, until softened.

3. Add the cauliflower rice to the skillet and stir well to combine.

4. Add the curry powder, turmeric, cumin, paprika, and salt. Stir to combine.

5. Pour in the coconut milk and vegetable broth and stir well. Bring to a simmer and let cook for 10-15 minutes, until the cauliflower rice is tender and the sauce has thickened.

6. Stir in the spinach and lime juice. Let cook for another 2-3 minutes, until the spinach has wilted.

7. Serve hot, garnished with chopped cilantro if desired.

This dish is high in healthy fats, fiber, and plant-based protein while being low in carbs, making it a great option for a keto vegan meal. Enjoy!
